You need a certificate of elegibilty to marry from your home country. This can be provided by your home countries consulate in China. It needs to be translated into Chinese, which your consulate can also do.
And you need a valid visa. I got married here on a tourist visa.
The Chinese partner needs their ID and family book. The Chinese partner can only get married to a foreigner in their home provence. In their houkou area.

Also forgot. If you are divorced or a widow/ widower, you need the associated documents to show to your consulate. It will take about a month for your consulate to issue the eligability to marry letter. And a few more days to translate into Chinese. Depends on your country of origin. The actual Chinese part of marrying a Chinese national is really easy.

Yeah, the bribe price must be given to the parents even if she is over 50, the bride, that is.
If the the family asks for a dowry, walk. My wife's family didn't and they've been completely out of our hair. Everyone who's paid a dowry has the wife's family all in their marriage and many have to take them in.

Why are you suggesting getting married in HK? A translated & notarized Chinese weeding book is proof of marriage in the UK for immigration purposes. Does the USA recognize them?

HK, saves you the trouble of all the docs needed for marriage in China. You don't have to go back to her hometown, marriage cert doesn't need to be translated because it's already in English
