I feel ridiculous asking this, but can somebody please post a link to an example of an official letter of release (in Chinese)? My current employer is clueless as to what it is (their first year of operation) and I need it for my future employer. Also, a sample of an FEC Cancellation Certificate would be helpful too as they probably have no experience with that either. Thanks in advance.

Direct them to SAFEA, and they will coach your employer at requirements and proper forms of RL.
Your employer must be familiar with SAFEA, who approved and issued your Working permit ...
Last year's RL is paper where it's written your name and several sentences below that. RL is entirely in Chinese, so I can't really describe what is the content of RL, but on the bottom of RL letter must be written name of your employer with red official stamp in the middle.
'add-it': It's isn't format paper, but just blank piece of paper (A4) with writing in Chinese and big red stamp on the bottom.
RL states, that employee (you) completed the Contract and don't owe anything to the employer! Something in that lines!

I tried several times to call the Jiangsu SAFEA branch during normal business hours - but no answer. I'll just tell the office girl at my school what you said as far as the general format of the letter goes - thanks!

It would be good if there were a reliable online source that gave examples of all the documents needed for the new Z-visa process. Some of these new academic programs are totally lost when it comes to assisting their new hires/departing teachers.

Your School knows, where SAFEA office is.
School most likely knows city's SAFEA and web link we have here is Provincial HQ of SAFEA.
Best time to reach SAFEA is from 9AM till 1PM with constant dialling till somebody doesn't answer it. I don't think it's worth the effort just to make your School write proper RL. Maybe, you could ask your new RP sponsor/employer if they can tell your School what kind of the letter they should issue to you at the end of the Contract.

These are Provincial HQs around China. You'll most likely get an English speaking Chinese SAFEA's agent on the phone.
Don't send an email 'cause nobody replies to emails. You must call them!

Find out from one of the teachers in your school where the provincial admin building is. Go to that building and ask someone how you can get in touch with SAFEA. Show them your FEC. (SAFEA might wonder why you have this older document rather than the ABC card)
Just take someone you now who can get your question across.
Hello. A Chinese university emailed me the invitation letter to get the visa from my country. When I knew about the bad practices of the university (problems with contracts with other workers) I decided to decline. I want to know if this decission can make I am not able to work in China. Although I have never worked with this university, should I get from them a release letter to work with other university? Can I ask other visa without problem?

Did you sign a Contract with Uni?
Of course, you did because without your signed Contract, Uni couldn't get WP and Invitation letter for you.
Now, you must respect the Contract. This is no different in China than it is in the West.
I am not sure, what is going to happen to you, if you won't honour your signature on the Contract, but I would say, you won't be able to get new WP and IL with new employer.
You might try to reason with Uni and ask them for the Release letter, but you better prepare good excuse about why you can't/won't take your post in China. Be also ready to pay off all fees, Uni had to shovel out for your documents.
