To me it's all about location. Location, location, location! In the city I live in I'd probably take a course around the CBD area just because the location. There are several schools and I know of at least one there.

I went to a school in CBD and it was terrible.

The teachers did  not understand my questions, my doubts were never answered and I was oftentimes told "dont worry about it" when I asked.

In fact, only the owner knew English the other teacher s only knew Chinese. Now, for immersion, that may be good, but still, the process is less efficient if the teacher cannot understand what the students doubts are.

There may be good schools there, but there is also a lot of crap schools, just like there are crappy English schools.

Be careful.

Any credible university with a reasonable amount of foreign students learning mandarin in your area should be good enough.
The school is rarely a factor. It all depends on the student. 
Where exactly in China are you?
Shandong University, Tongji University in Shanghai, Tianjin University are the ones I've heard are the best. If you're in Beijing, BLCU is terrible. Try another place. Maybe Qinghua University. Most of the people I've met from BLCU (Beijing Language and Culture University) there can't speak Chinese for shit. They party and relax too much.

Some private language institutions have intensive programs and private tutoring.  Those are obviously more expensive and kind of boring due to the lack of classmates and there's a high probability of being overcharged or scammed. etc
Universities are your safest bet.
