I'm not a picky eater, but sometimes I just don't want something in my dish or I want something taken out. And everytime I ask for something like that, most of the time I get the good ol' "BU KEYI!", "no can do". They would honestly charge me a couple of kuai more and I would be OK with paying it for the addition of something to my meal. But instead they freak out and tell me it's impossible (Last night someone told me it was impossible and they added what I wanted anyway and didn't charge me ) SO WHY DOES IT HAVE TO BE IMPOSSIBLE TO ADD A LITTLE SOMETHING OR TAKE SOMETHING OUT OF A DISH???
It's a time-honored recipe passed down from their ancestors. You're not supposed to mess with them. In the same way, you're not supposed to put sugar in tea--it's seen as a perversion a classical delicacy.
One of my Chinese friends wanted to mix red wine with orange juice because it was too bitter. I explained that one simply doesn't do that. (Surprisingly, it didn't taste that bad). De gustibus non est disputandum.
I don't know, people work on their own kind of conveyor belt, like in my local noodle place, everything's close at hand, they get their order and bam, bam, bam, fill it. If I asked for something that was not immediately at hand it might require a looong walk to a fridge, the washing and chopping of said item and the disruption to their routine which, lets face it, could knock the time schedule of coming orders askew, disrupt all those around them and as a result of the butterfly effect cause a general meltdown in society, the final thundering crash to the ground of the world's economy, fire, brimstone and chaos, and the eventual end of times for man!
So think twice, Miss, before you request mushrooms on your stir-fry. Think twice.

It's called being anal retentive!!!!!!!!!!!!!!! :( A number of years ago in my country, I had dinner with a friend. I felt my portion of food that was served to me was too small for the money that I was paying. I politely spoke to the manager, and VOILA!.. a larger portion was brought to me! No freaking out..no hysterics.no "IMPOSSIBLE" B.S.!!!!!!! * If I had been in China, there would have been a meltdown by the CHEAP Chinese staff!!!!!!!!! * I've said it before, and I'll say it again. The service here in China is THE ABSOLUTE WORST!!!!!!!!!!!!!!!! :( * South Korea IS A CLOSE SECOND!!!!!!!!!

It's because this is a culture where people are used to doing JUST what they are told. No more and no less. If the boss says your dish comes with cucumber then asking not to put it in would be disobedient and require suddent rational thought instead of just repetative procedure.
