I'll be working in Guangzhou but my visa is being taken care of in Wuxi. And the school told me to tell the Chinese consulate in my country that I'll be working in Wuxi. I shouldn't even mention GZ. Is this normal and can anything go wrong? I just usually expect the worst when dealing with these kinds of things.

Your work visa is tied to your place of residence. That is the first comment. The second comment is why even engage with a company that starts playing games like this from the beginning? When you arrive in China, will your declared place of residence be Wuxi? Will your FEC be issued in Jiangsu Province? Sure, I suppose if you are not caught and everything goes smoothly, but if you are in Guangzhou even temporarily you will need to be registered with the local police for the local residence permit. In any case, it's not a situation in which I would like to find myself.
You can not work legally anywhere but Wuxi with a visa from there. If your place of employeement gets a raid you will be arrested for working illegally.
As for your question you can travel freely to anywhere you just cannot work.
this is very common practice for many companies to issued permitted from the city that they have relationships with but it is illegal.
It would appear from what you have said that the school in Guangzhou is not in a position to obtain the 'Z' Visa documentation and have used a third party organisation in Wuxi to get it for you. This is entirely illegal and will result in problems if you are caught. Best thing to do is refuse and look around for a more legitimate organisation to work for.
