I have worked at two schools the first did take out a tax and the current one says they will not. I want to know incase I have problems with my pay in the future.

if you have work permit and resident permit to work legally, you have to pay tax. coz you are on the tax system already. and the school needs to pay the tax based on your salary with the chart table formula.
if you don't have work permit and resident permit, then no such need for you to pay tax.
You are working illegally, hence no tax. Your first employer lied to you and took some of your salary for himself. Unless you were working legally for your first employer of course.

Taxes are handled differently by different employers but generally, yes, you have to pay taxes on income over 4,800 rmb per month if working legally. If you're paying taxes, you should demand to see tax receipts. Employers are known to take out "taxes" that are just going straight back into their pocket.
