I have my residence permit in my passport, do I need any other documents? Should I carry al the other certificates and what not with me?

just don't leave anything of value such any other identification documents: anything that can result in identity theft.
Depending on where your accommodation is and how secure it is, don't assume that no-one will enter it.
Last year I asked an American colleague who was staying to keep an eye out as her door was opposite mine.

No, your passport is fine to leave china. Your residence permit allows you as many entries/exits as you like for the period in which it is a valid.
Don't forget that you will need to report to the FAO office within 24 hours of your return. You do not have to report your departure. But, you are required to report back to them when coming back to work here.
Oh, and don't forget to water the plants before you leave....Ha Ha.
