So I am thinking of packing up my place at home, and moving to China for a few years.
Tired of spending money at home for rent, insurance etc. when I am here 8 months a year anyways.
If I live here on an F visa year round (the good one), am I still considered a resident of Canada? For tax reasons obviously.
And if I am working for a Canadian company and being paid by them, will China expect me to pay taxes? Or how about Canada?

Dude, I am not aware of Canadian tax laws, so my answer will be based on what you would expect if you were from USA.
And also, i am assuming you are paid from the company back home, no way you are paid locally.
As far as paying taxes in China, not until you have resided here at least 5 years, and there is a minimum number of months per year to count as a year (if I remember correctly, it is 9 months minimum, but not sure).
Now, if you were from USA, you will pay taxes on the income every year, but can deduct taxes paid to China as an expense to lower your income. Also, somehow, other benefits like overseas allowances, living allowances, trips back home, etc, are taxable too, so your tax liability will be greater. Most US companies will reimburse you for the extra tax paid for the extra income, but that would also become taxable income next year, so eventually this will grow so big most companies will rather keep you home and send someone new.
From this, maybe you can have an idea, and seek on line, further information from Canadian Tax Bureau.

Just add a little more about USA taxes...if you can manage to keep your time spent in the US to 30 days or less in a year, then you are not required to pay any federal income taxes for that year. You are, however, still liable for social security taxes. I'm not there yet...maybe next year though :P
To not pay Cdn tax; I checked this out, I have to break every tie I have to Canada and since I own a house I would have to have a rental company look after it. I can't rent it out. Thats every tie , Bell i think bank accounts even. I can't severe all my ties, so l'd have to pay. It doesn't seem fair since what possible Canadian benefits can I be getting while outside the country. Just a money grab by our free democratic government.

Better than the states. They're making dual US/Canadian citizens with no ties to the US whatsoever (people who left in their early childhoods, for example) pay a lifetime's worth of back taxes.
You cannot cut ties to Canada unless you're a dual citizen of another country. Severing all ties requires a loss of passport for your home country also.
As an Expat in China, the tax rates change depending on how much you make, if it will be above 20k monthly it's 20%, if it goes above 30K you will pay a higher tax rate, but there are some ways around this and I'm sure the company knows the ropes in China.
If you reside outside of Canada for 2 years, you will lose your free medical and will have to reside back in Canada for at least a year before this privledge is given back to you
If you are coming to China for the purpose of paid employment, the 'F' visa will not be a 'good one' because you need a 'Z' visa!
You are screwed either way! Go back to Canada or come here....CHina has many years of history and Canada has basically none at all. BTW aren't you already in China? This is odd throwing a curve ball but I don't know you. If your spending money for rent at home and paying rent here that is the perfect definition of a Canadian idiot! Just pay rent in one place come to China they have more culture then in Canada anyways. You can't lose your canadian citizenship just because your working in another country....that's a pretty dumb question about China!

for your Aussie cousins like me
if we stay outside of home for 3 months we don't pay tax on our overseas income
and we don't loose our benefits
We will also keep being paid child endowment by the government for up to 8 months
absent from Aus
so the answer is emigrate to Australia
or just turn up on a boat like the rest of them do
and then go back to China as a Australian
