Q: How does China's restaurant hygiene grading work?
I've seen certificates on walls of restaurants but not sure what they mean. Can anyone offer help?

They just mean that they have been registered by the local authorities. I think it gives them the right to purchase certain products legally
It can't work. I wondered into slum areas and just regular areas and I saw open restaurants that looked like they had been a garage last week. The places was blacker than the ace of spades and filled with tthose little kids table and chair sets. They were the only restaurants I ever saw full of people, but they looked disgustingly dirty. I'm sure the three second rule only applied if something fell on your plate.
The more that restaurant paid the higher it's grade is……
