You can't legally unless a VERY high level job in Shanghai or Beijing.
I'm told Shandong province will hire to teach English to age 65, and provinces north very cold will also hire you because nobody wants to work there. Brigham Young has a program for geriatrcs to teach in China also, maybe check their website. You can send a message to ambivalentmace, I know he has 3 teachers at his company over 60, but he want answer your message probably until late august when he gets back from Syria.

I didn't ask, don't want to know, but Israel said I was too old to help with their endeavors anymore.
The reason for not hiring persons after they become 60 years of age (some places 62, others 65) is the health insurance cover. No Chinese company will cover you after 60 years of age. But one thing that you can do is to get yourself a private (State sponsor coverage like Medicare in USA are not acceptable, because will not pay if you are in China) health insurance carrier to cover you, and then you will be able to work, since there is no law prohibiting you from working if you comply with the requisites for the job as if you were under 60 years of age

That's interesting to know. Friend of mine has recently got a contract with Flextronics as Innovation director. They've had to employ him in Shanghai as they couldn't get him a work permit in Zhuhai. He's 65. Local labour bureau regulations, like most things in China, vary for place to place.
