some of the eggs look really strange,being from Africa,the eggs i have seen are white,light brown n brown.any color darker is weird n i have seen black eggs. any word on the quality of eggs here generally
Yes those black ones are called rotten eggs but they are perfectly healthy and good to eat. Those are some of my favorite eggs. Most people are use to the egg whites but the other eggs are just as healthy.
I would say the quality may not be the best. Most people here just feed their chickens leafy greens, which means the eggs are probably not as nutrional. Overall, they taste the same and still have protein, and you should have no problem eating them. Mattaya is wrong, the black eggs are not rotten. What you saw were most likely century eggs. They are black because of what they are soaked in.
Eggs(from chicken) in China are just about like everywhere else, as per my own experience. I do use a lot of them, sometimes two in the morning for breakfast (scramble or hard bolied), and somedays I also enjoy a couple sunny side up with a steak and mash potatoes or rice. At least once per week I will make a spanish omelette (onions, potatoes). And I do also make a lot of desserts that use many eggs, like custard, pudding, etc.
At the local open market I was lucky to find a lady selling eggs, and she has befriended me, sort of yaking me under her wing. She introduced me to the two yoke eggs, and I am hook with them now. I get 15 ea of those for 13 to 15 yuan, depending on availability. In two years never had a problem with any of them.
"Black" eggs is like a "preserved egg, and many consider them as a delicacy. Normally they are regular eggs, coated with a mixture of clay and other things, and left aside for a month (called century eggs) or longer (millenium eggs). The shell turns black, the yoke dark green and the egg whites brownish. But when open they stink (heavy sulphur content), so I stay away from them for that reason. Another reason not to eat them to often is because they use chemicals sometimes to accelerate process, like lead zinc (by some, not all), and that could be poisonus

I have been to chicken farms in the West and they were horrifying. I can't even begin to imagine how much worst they are here. Chickens here aren't just fed "leafy greens" as Jnus suggested, in fact they are fed with all sorts of hormones and artificial feeds which make them produce bigger eggs, faster. If eaten in large amounts, the hormones will definitely seep into your blood stream, and while it probably won't cause any obvious damage, the longterm repercussions remain to be seen.
Free range eggs are just a marketing scam too. Free range doesn't mean the hens can roam around in spacious, green fields...it just means they are squashed into a smallfenced outdoor area with tens of thousands of other hens and fed the same, hormone-laden feed as the indoor hens. Don't think for a second that hens have a good life.
But to get back to the original question, if you look carefully at the egg cartons in large supermarkets, you will find some which claim that their chickens have not been fed any hormones. I usually buy those but still don't really trust them 100%.
