My husband and I are planning a trip to Europe in a few months and have started looking into the documents needed to get a 90-day Schengen visa for the purpose of tourism. There seem to be 2 types of 90 day visas: one for spouses of EU citizens and another one for standard Chinese tourists with no EU spouse. While it all looks fairly straightforward, this will be our first time applying.

Very easy for them. My wife need only provide passport, ticket and married certificate, and formular. She even can overstay visa by 90days, kust let know the foreign police dept. Worse is go to China with Chinese mom for our son. He is EU citizen and we paid 150 eur for his L visa. No family reunion visa or similar exist, if wasn't introduced to us.

Overstaying a Schengen visa is a very bad idea.
It can land you in a quarantine for several years!
Schengen has the rule 90 days in pr. 180 days as a maximum. And you cannot overstay that unless you have a residence permit.
Yep, Europe has much more relaxed visa laws than the U.S.
Extremely easy,and you only need to provide your marriage certificate once, if you have validated your marriage at the consulate/embassy before. At the Italian consulate in shanghai they know us by now and all we need is the form, a travel itinerary and my husband's passport. We usually tick the box "tourism", because that's what we mainly go to Europe for, but specify he is married to an eu citizen and provide my passport number and copy. No interview needed.

Out of curiosity, how detailed must the itinerary be? And do you have to provide evidence of hotel bookings? Our plans are still up in the air right now and we'd really like to be flexible once we're in Europe. I looked at a few websites that mentioned you have to have a complete itinerary, hotel bookings for each day etc. This all sounds really restrictive and difficult to plan out.
Quick tip, if you are applying for a visa to a country that is not your mother country with your spouse of China, it is quite easy, the trouble is always taking your spouse to your home country for reasons of immigration. I took my wife to France for Spring Festival; I am North American; she Chinese, we did the paper work, never had an interview and took less than two weeks.
While applying you might as well apply for a multi-entry visa. From my home country, Denmark, they will grant you 1 or 2 years the first time, 3 or 4 years second time and finally 5 years with multiple entries. My wife currently has a 2 year multi-entry visa for the Schengen areas.
Just remember the Schengen 90 days pr. 180 days rule!
You can maximum stay 90 days pr. 180 days in the entire Schengen area, so you have to be out of the Schengen area the other 90 days. So if you use your 90 days in one stretch, you cannot enter again for another 90 days.Overstaying will give you problems.
