Gonna have dinner with the boss of my school, obviously Chinese. Are there certain things I HAVE to do, or should absolutely stay away from?

We don‘t really care so much about table manner. Don't worry about that.
But if you go to their house, make sure you can eat a lot, as they will keep on giving you food, and to eat a lot shows your appreciation.

Also, as the 'honoured guest', you might find yourself on the receiving end of some weird stuff, like chicken's feet, duck's tongues, swan's feet, pig's ears/trotters, fish heads.... basically all the heinous shit you would never eat in your own country is served up to the most honourable guests in China.
Just brace yourself for the worst.
Yeah eat the food you pick up slowly, and less of it because they're going to keep topping up your bowl with food.
And make sure your liver is fully functional before that dinner!

Drink a shot or two of pure oil. It halps the alcohol prevent from being absorbed in your intestine. If it's your boss, then you're bound to drink a lot. You don't want to stand on the table, take your shirt of and spinning your hips because you're too drunk.
As for the rest, they don't formalize as much as some cultures do, so as long as you're not being a weird obnoxious person, it's ok
To speak without a foreign accent, make sure you have a mouthful of rice while talking.
Smack your lips loudly and often.
Interrupt anyone who is trying to speak.
Play DOTA on your phone at all times
Sit with non-smokers and light up every 8 minutes.
Inappropriately caress a stranger's child's face.
