I see a lot of "Taiwanese" tea shops and cafes that sell some nice fried chicken and other snacks, but how would you define Taiwanese cuisine? Is there such a thing?
No it's like Chinese cuisine, minus the diarrhea, the food poisoning, the gutter oil and other scandals.
I would say that there is a Taiwanese cuisine,as one of many Chinese cuisines. The big difference between Taiwanese and other Chinese cuisines being the cleanliness and safety of the former.
As others. I would also add "finesse" to it. When dining in Taiwan you can also eat without fear of choking on some splinter of bone.

I'm guessing there would be the indigenous people of Taiwan, but I don't know what they ate, or how many are left...
