Perhaps I'm not looking hard enough, but it appears as though there are no speed limit signs posted (in Beijing anyway).
Does anyone know what the regulation min/max speeds for cars are on Chinese roads/highways/interstates?
Do drivers ever get pulled over for driving to fast/slow?

Yeah there's speed limits. For highways there are signs over each lane to show the speed limit of that lane.
As far as enforcement.... the street cams catch most of the speeders.

Sorry to contradict you, but it's not always the case. Usually for main roads, the speed limit in mentioned only at the exit of the freeway when you enter the main road.
If only one lane per direction :
City roads : 30 km/h
China National Highways : 40 km/h
If major road with central reservation or two uninterrupted yellow lines:
City roads : Up to 70 km/h
China National Highways : 80 km/h
Other:
City Express Roads: 120 km/h
Expressways: 120 km/h

i just go the flow of traffic that seems to work for me
