What can I do if someone threatens to report my passport lost/stolen so i can't return home? Or it could be my employer?

Point out to them that they'd need to report it lost or stolen to the police and get some sort of police report confirming that, which you'd then need to pass on to your embassy. (I'm pretty sure that's how it still works)
I doubt some random Chinese person can go into a police station to report a foreign passport as stolen without the passport owner being there.
You could also explain how passport fraud is taken quite seriously and someone who is obviously not you trying to cancel a passport would instantly raise some red flags and quite likely bring police attention to the person doing it.
I'd also tell them ( not necessarily do it but they wouldn't know that ) that you've already notified your embassy of the threat and they've noted that a request to cancel it not coming from you should be treated as fraud and that (insert name here) has been recorded on file and will be referred to police as a probable suspect.
You can't/Nobody can ... report passport stolen or lost if the passport wasn't stolen or lost.
Threatens with what? Imaginary fiction??
Let him/her threaten ... until his/her eggs aren't hard-boiled ...
And ..., if the passport was lost or stolen, you should contact your Embassy in Beijing ASAP!
Now, if you gave your passport to your employer, and the employer refuses to hand it back to you, you should inform your Embassy in China ASAP, also!
The embassy will tell you, you should always keep your passport in person while in a foreign country, or in other words, you shouldn't give your passport to your employer or to anybody else.

One more guess, they are making these absurd threats because you refused to comply with a ridiculous (and possibly illegal) demand or caught them out doing something unethical?

Tell them to crack on, cancel it yourself and get a new one from your nearest consulate.
Someone smarter than me is welcome to correct me if I'm wrong but I'm pretty sure that threatening someone online or electronically is a crime in itself here in Harmony Guo. Turn the tables on the nasty little rat by engaging him in a conversation where he digs himself a nice deep hole.... Then report him to Tencent and the cops. That will be a giggle and put you in control of the narrative. At the least his social credit will take such a hit he'll be riding intercity buses for years. Ha!
