I would say:

 

- the truly kind people of China (which is very few and far between) 

- the amazing surprise of finding an awesome hole-in-wall food place and sharing it with the other foreigners (like you discovered gold) 

- the random crazy events that you could never think possible (two Chinese people kill themselves by accident in a parking stall) 

- some interesting freedoms (like walking down the street drinking a bottle of beer)

Cheap food and beer, lots of disposable income, the big Chinese style banquet meals with overeating and baijiu drinking  (if I did them often I'd get sick of them but I only do a few every year)
