The fluffy kind with maple syrup.
In my city (not Beijing), McDonalds used to have good pancakes for breakfast, but they discontinued them last winter. ANd in doing so, lost a Sunday customer for breakfast, namely me.
Try going to a Buddhist temple. There are many in Beijing. Just wait until someone else leaves an offering and you can get all the "God food" that you want.
And waffles!!!
I really REALLY miss waffles! Like the ones you find in Denny's, though I would be perfectly content with Aunt Jemima frozen ones....

Yesterday I happened to spot Aunt Jemima's pancakes at April Gourmet for about 25 kuai a pack. They had two kinds: plain and with blueberries. Im not American so wasn
t sure they'd be any good.
If the previous ideas fail you, have you tried making them yourself? Ask a friend or relative to send a box of your favorite mix, and possibly a bottle of syrup, from home. If that doesn't help, here is a recipe that can whip up some passable flapjacks from scratch, if you can find decent ingredients (*has no idea what your shopping options are).
Here is a recipe I use regularly, which should hold you over. (I'm sorry, I'm a Yank. I don't have translations for metric. I hope you have/can find some measuring equipment...)
Pancakes:
3 large eggs
1 cup All-purpose flour
1 rounded teaspoon Baking powder
1/2 cup milk
pinch of salt
1 tbsp sugar (optional)
1 tsp vanilla flavoring (optional)
Separate the eggs, putting the whites in one bowl and the yolks in another. Add the flour, baking powder, milk (and vanilla, if using) to the yolks and whisk into a batter.
Whip the eggs whites with a pinch of salt (and sugar, if using) to stiff peaks, then fold into the batter mixture.
Heat a skillet to medium and add a bit of oil or butter to prevent sticking. Pour batter into your pan (I generally use a 1/4 cup measure, which results in 4" pancakes), and fry until the pancake starts to firm up around the edges and looks golden on the bottom. Flip it over and fry the other side 'til golden.
Serve hot with butter and syrup.
(The above recipe makes about a dozen 4-inch pancakes. For a single person, I use 1 egg, 1/3 cup flour, 1 level tsp baking powder, 1/4 cup milk, and 1 tsp sugar and vanilla. It makes about 4 pancakes.)
