Yes...hotels that cater to westerners will even give you an English invoice.
Taxis, restaurants and stores will always give you one, but they will be in Chinese, but still a normal reciept.
If they don't give you one then say "Fāpiào" and they will know to give you one. Because I am here on business and expense almost all costs I have become a master of getting reciepts for everything.

ah, thanks. Been trying to figure out the Chinese word for a long time. Google translate doesn't translate 'receipt' very well.

Because the literal translation for this is "invoice" if you Google it. Threw me off at first too.
Yes. Just say 'fa piao' and they'll know what your talking about
Big places will give you one, all you have to do is ask. The smaller and cheaper the place the more you have to push to get one, and the more likely it will be fake (government tax that they would have to pay, fakes work for most expense reports anyway). If you are buys from the little street vendor, you're not going to get receipt.
Hotels no problem as long as they were legally able to house you.
Taxis as long as you take a real one. Black taxis, mototaxis, and the three wheeled little flying dragons you won't get one.
