Many times I've looked at a ticket on one of these sites then had a friend check it out on the Chinese version and it's usually a few hundred kuai cheaper than their English site. How do they get away with this? Especially with China always complaining about unfair prices for items sold here compared to the west.....

It's strange, I put your theory into practice and did the following experiment :
1) English version : Shanghai-Hefei round trip : 220 (flight ticket) + 130 (fees) x2 = RMB 700
2) Chinese simplified version : Shanghai-Hefei round trip : 220 (flight ticket) + 130 (fees) x2 = RMB 700
3) Chinese traditional version : Shanghai-Hefei round trip : 220 (flight ticket) + 130 (fees) x2 = RMB 700
As you can see the prices are the same.
Do you have a test to make? Then we can see if there is really a difference.
But, strangely, I feel that it is indeed possible that there is a difference (not yet founded however). Well, getting rich on the back of non-Chinese speaking foreigners is also a good way.
Maybe it's changed. I've looked into going to Hong Kong before as as well as Canada. Both times the English was more. My Chinese isn't good enough to check on my own. But, if yours is, see what international flights are. Try Beijing to Seoul.
Sangoku:
I tried with Beijing-Seoul, from Sept 20 to 30, with Korean Air, KE2852 (go) and KE2851 (back), both the Chinese and the English versions propose the price of RMB 1650 (ticket) and 972 (fees).....
